The name of this dish means "pot on earth" as it comes from two words: pacha (earth), and maimed (pot). This dish of Huancayo is also one of the most representative and known in almost all Peru.
Ingredients:
Over time it has changed the way we do Pachamanca in different places in Huancayo but still performed traditionally this dish.
- Pork, beef and guinea pig or rabbit, seasoned with a spice prepared with marigold leaves.
- Potatoes, sweet potatoes, beans and corn tamales
